Sweet and sour chicken breading11/21/2023 ![]() ![]() I’m really fussy about dry chicken! Mine is baked for 20 minutes – tops. Drain on a rack over a cookie sheet to let the excess oil drip off. Flip the chicken halfway through until golden brown and the internal temperature reaches 165☏. You will need to fry in batches, do not crowd the pan. The chicken is NOT DRY. I have seen recipes that call for the chicken to be baked for 45 minutes to 1 hour which I find dries out the chicken. Fry the chicken pieces, not touching in the oil. With this recipe, I have tried to create the same crispy fried chicken with a sweet and sour sauce with very lite breading of corn starch. The chicken really is crispy! The fact is, you will never be able to make chicken in the oven that is truly as crispy as deep fried (except wings – see my recipe for Truly Crispy Oven Baked Wings!). You can omit one of these but don’t leave out all of them, the sauce will taste very “flat”. Usually that “something” is either Worcestershire Sauce and/or oyster sauce (sometimes also soy sauce). Place cornstarch and beaten eggs in separate bowls. ![]() Many Sweet & Sour Sauce recipes taste like they’re missing “something”. Cut chicken breasts into bite-sized pieces and season with salt and pepper. Dip chicken into cornstarch and coat all the way and then into eggs. I don’t know how to properly describe my reaction when I accidentally eat something far too sour! Suffice to say this is tart, not overly sour. Chicken Breading: 3-5 chicken breast salt and pepper 1 cup cornstarch 2 eggs, beaten 1/3 cup canola oil Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. ![]() But it is less than the 3/4 to 1 cup that you’ll see in many recipes. It’s made with 1/2 cup of sugar which is still a lot compared to my usual midweek meals. And it’s MY favourite way of making Sweet & Sour Chicken in the oven. Here’s why: Using a whisk or fork, mix until well combined and there are no lumps. Combine ketchup, brown sugar, white vinegar, cornflour, salt and water into a bowl. Coat it with the flour first, then drop it in the eggs. To the pot with the water, add the sugar. Press the fruit into the sieve to release all the water and juice. Drain the water through a sieve into another pot. Step 2 Add some beaten eggs to a small bowl and some flour to another, then work on coating your chicken. Sweet and Sour Sauce Place the sliced orange, lemon, and ginger into a medium pot with 5 cups of water. I don’t like to shout out from the rooftops “this is the BEST baked Sweet & Sour Chicken!” because who’s to say that theirs is the best? But this is a darn good recipe. Place the pork, garlic salt and light soy sauce into a bowl and massage the garlic salt and soy sauce into the pork pieces. Step 1 In a small bowl, mix the sugar, ketchup, vinegar, apple cider vinegar, soy sauce, and garlic powder together until combined.
